SHROOMY HALLOUMI FANJITAS

Like a chicken fajita but with less dead chickens. Mushrooms and halloumi make a great partnership and hold the spicy spices very well. Do the exact same with chicken if you want, but at least try this first.

Ingredients

Teaspoon Garlic Powder
Teaspoon Cayenne Pepper
Half Teaspoon Hot Chilli Powder
Teaspoon Cumin
Half Teaspoon Powdered Coriander
Half Teaspoon Salt
Teaspoon Cracked Black Pepper
Teaspoon Smoked Paprika
4 Portobello Mushrooms
1 Pack Halloumi
A Red Pepper
As many Tortilla Wraps as you wish
2 Tablespoons Plain Yoghurt
1 Tablespoon Mayo
Juice of a Lime
Olive Oil
A Big Juicy Tomato
Handful of Coriander

2 Tablespoons Plain Yoghurt
1 Tablespoon Mayo
Juice of a Lime
Olive Oil
A Big Juicy Tomato
Handful of Coriander

Instructions

  1. Make your spice mix by mixing all of your spices in a bowl. Pretty simple instruction that, maybe listen to some funky music whilst cooking too. That will improve things.
  2. Slice your mushrooms into long strips of mushroom. Keep them relatively thick, you want to get a good bite. Chop up your halloumi into little sticks as well as your red peppers. Make them little sticks too.
  3. Fry up your halloumi a bit first in a splash of olive oil on a medium-high heat. Add a spoonful of your spice mix and toss about, coating your squeeky cheese. After a couple of minutes chuck your shrooms in. You may need a splash more olive oil and you definitely need another spoonful of spice mix. Give a big mix, cook them until they're slightly softened. We put the peppers in last with a little more spice mix. These will give a bit of crunch so only need cooking for about 1.5 minutes.
  4. Mix your yoghurt, mayo and lime in a little bowl. Spread this on a tortilla wrap and chuck on a good load of spicy, flavoursome, mushroomy halloumi mayhem.
  5. Dice a tomato and chuck chunks of that on top with some fresh coriander. Wrap up and tuck in. Think about how nice it is for the rest of the day, maybe even dream about it. Delightful stuff.
